Kubu, an extraordinary dining destination within Mandapa, a Ritz-Carlton Reserve, finds its muse in the traditional Balinese rice storage huts that farmers used post-harvest, known as kubu in Balinese. This inspiration blossoms into a stunning open-air bamboo structure that has become an icon in itself. Surrounding this structure are nine intimate dining cocoons, each offering panoramic views of the tranquil Ayung River. Leading the culinary journey is Executive Sous Chef Eka Sunarya, who emphasises locally sourced, artisanal ingredients and innovative culinary compositions. Kubu exclusively opens for dinner, presenting a carefully curated The Gourmet, a 10-course degustation experience. Among its standout dishes are the Lombok char-grilled baby octopus, and The Beans – seasonal Balinese legumes with cashew cream.
